Abstract

Bevat ons voedsel vreemde stoffen, en betekent dit een gevaar voor onze gezondheid? Ziedaar de kernvraag van onderhavig boek, dat reeds eerder als monografie nr. 16 in deze reeks verscheen, maar inmiddels grondig werd geactualiseerd resp. herschreven. Over hogergenoemde vraag heerst heel wat onbehagen, nog versterkt door de aandacht die de media regelmatig besteden aan al of niet reële schandalen of schandaaltjes in dit verband. De monografie wil in deze materie een aantal misverstanden rechtzetten. Het accent komt daarbij te liggen op de zo genaamd. 'contaminanten', dit wil zeggen die stoffen die niet opzettelijk aan een voedingsmiddel zijn toegevoegd, maar daarin aanwezig zijn, hetzij als residu, hetzij door migratie, hetzij door de vervuiling van de omgeving. Worden achtereenvolgens behandeld: zware metalen, pesticiden (geheel herschreven), antibiotica en hormonen, mycotoxinen, nitrosaminen, polycyclische koolwaterstoffen, bepaalde industriële producten en radioactieve stoffen. In deze editie werd ook het hoofdstuk 'additieven' herschreven en op substantiële wijze uitgebreid. Additieven (zoals kleurstoffen), door de doorsneeburger meestal in één adem genoemd met contaminanten (zoals kwik in vis), zijn opzettelijke toevoegsels die aan een strikte reglementering zijn onderworpen.Telkens worden de volgende vragen beantwoord: waar komen deze vreemde stoffen vandaan, welke zijn de eventuele schadelijke effecten ervan, wat is de aanvaarde norm en hoe bepaalt men die, wat zegt onze wetgeving (niet)?
